Holiday spiced granola

With the holidays in full force, this makes a great time of year to do some baking.

One option would be delicious, warm, spiced granola that may remind you of gingerbread.

It is gluten-free and delicious with milk, on oatmeal or in cookies.

Ingredients

* 4 cups rolled oats

* ½ cup olive oil

* 2 teaspoons ground cinnamon

* 1 teaspoon ground ginger

* ½ teaspoon ground cardamom

* 1 teaspoon kosher salt

* 1 teaspoon vanilla extract

* 1/3 cup real maple syrup

* 1 cup pecans

* 1/3 cup molasses (optional)

* ½ cup raisins

* 1/3 cup chopped candied ginger (optional but delicious)

* 1/3 cup of dried cherries

Combine all ingredients in a large bowl and mix well.

Cooking

Place on a lined cookie sheet in a preheated oven (350 degrees).

Bake for 18-20 minutes until golden brown (keep an eye on it the last few minutes).

It will stay fresh for 1-2 weeks.

Makes a great gift.
